You will often spot a small Lakeland terrier in tow with Angus around the farm, this is Fig. In his spare time, Angus is a keen runner and enjoys the outdoors.

Emily is expanding the sales and marketing side of the business. In her free time she enjoys playing tennis, going skiing and taking trips with her dog Ozzy.

As the longest member of staff, Dave likes to be known as the Chief Dinosaur. As Fisheries Manager, Dave works closely with Steve, Rob and Will to ensure the best quality fish are delivered to our customers. He enjoys working close to nature and loves the peace and tranquility of working at Bibury Trout Farm. In his spare time, Dave likes to go river and lake fishing and particularly enjoys catching pike, barbel and sander.

Fisheries Production Manager
Steve started working at Bibury Trout Farm in 1998 after studying fish farming at Sparsholt College in Hampshire.
As Fisheries Production Manager, Steve works closely with Dave managing the stock once the trout have left the hatchery. His daily responsibilities include: feeding the trout, ‘grading’ orders, fish health and husbandry. In addition to Fish Production, Steve is also responsible for attending local farmers markets where you can find him selling: fresh trout, smoked trout, pate, quiches, trout crumble and Poulton Hill Wine. In his spare time, Steve is a keen fisherman and enjoys fishing on rivers catching Chub and Barbel.

Nick joined Bibury Trout Farm in March 2025. A Cordon Bleu classically trained French chef, he is deeply passionate about the art of gastronomy, crafting dishes that celebrate the finest ingredients with precision and creativity. His love for food extends beyond the kitchen—it’s an obsession with flavor, technique, and the pursuit of perfection. Among all ingredients, trout holds a special place in his heart. Its delicate texture and versatility inspire him to create refined, innovative dishes that highlight its natural beauty. Whether smoked, cured, poached, or pan-seared to perfection, he approaches trout with the same meticulous attention to detail that defines his Michelin-standard work.
As a former executive chef for Très Chic, he has honed his skills at the highest level, ensuring that every plate reflects a harmonious balance of technique, artistry, and passion. For Nick, cooking is more than a profession—it is an endless pursuit of culinary excellence

Bibury Trout Farm is looking for an enthusiastic and dedicated individual to join our team as an Ice Cream Parlour Assistant. As one of the most picturesque locations in the Cotswolds, Bibury Trout Farm offers a unique experience for visitors, and our ice cream parlour is an essential part of that experience.
Responsibilities:
- Assisting customers in choosing from a wide range of delicious ice cream flavours
- Preparing and serving ice cream cones and cups.
- Maintaining a clean and organised ice cream parlour environment
- Operating the cash register and handling transactions accurately.
- Ensuring that ice cream stock is properly rotated and replenished
- Providing excellent customer service by answering questions and addressing customer concerns
- Collaborating with team members to ensure smooth operations in the ice cream parlour and the rest of the farm
- Adhering to food safety and hygiene regulations at all times, ensuring allergen guidelines are followed.
Requirements:
- Previous experience in a customer service role is preferred, but training will be given
- Excellent communication and interpersonal skills
- Ability to work in a fast-paced environment while maintaining attention to detail
- Strong organisational and multitasking abilities
- Flexibility to work on weekends, holidays, and during peak visitor seasons
- Basic math skills
- A friendly and approachable demeanour with a customer-first attitude

We are currently seeking a Car Park Attendant to join our team. The role involves managing the car park operations efficiently and ensuring a smooth flow of vehicles in and out of the car park.
Duties:
- Communicate effectively with drivers to guide them to available parking spots
- Direct traffic as required
- Collect money from drivers
- Communicate with the rest of the site any issues that occur
There may be further opportunities on site for more work for the right candidate.
